Ingredients

(Serves 6-8)
Produce:
  • 1 medium butternut squash, peeled, seeded, and cubed
  • 2 cans white beans (~30oz), drained and rinsed (or pre-soaked dry beans)
  • 1 yellow onion, chopped
  • 3–4 garlic cloves, minced
  • 2 celery stalks, chopped
  • 2 medium carrots, chopped
  • 1-2 cans of sweet corn (or the kernels of 2-4 cobs)
  • Optional: kale, chard, or spinach leaves (added during the final 5 minutes)
Soup Base:

  • 1 tablespoon olive oil or butter
  • 4 cups vegetable or chicken broth
  • 1 teaspoon ground cumin

Instructions
